If it's not in carolina format, is in the shape of the famous Bomba or Lightning, both types of candy being made with the same dough and filling, changing only the size. So, one way or another, I'm sure you've already eaten one of them..

These days doing a poll on Instagram I asked which recipe the followers wanted me to make and they replied Carolina! Sincerely, na hora eu pensei e até respondi “não quer mais nada né?”. I doubted my potential in making a recipe that I thought was super difficult. after much thinking, thought this could be a cool challenge and that maybe I might give it a go, see at least carolina's original recipe to see how it was done.

I just took a test and it turned out pretty bad, but I didn't find it as difficult as I was imagining so I decided to improve the recipe and after 3 attempts I came up with an AMAZING result of carolina recipe or gluten-free profiteroles.

Ingredients to make Carolina gluten free

  1. Start by putting the margarine, water and sugar in a pan. Turn on medium heat and let the margarine melt.;
  2. when it's boiling, turn off the heat and add the cup of rice flour and stir quickly so that it becomes a single dough, without lumps (if there's a little bit of flour left, no problem but stir as much as you can);
  3. Transfer the dough from the pan to the bowl of a stand mixer and place 1 egg at a time, beating at medium speed;
  4. When you finish hitting, you can turn off the mixer because the dough will be ready;
  5. Place the dough in a pastry bag fitted with a large tip for shaping.;
  6. In a form lined with parchment paper, make small mounds of dough, because this mass grows;
  7. Wet a fingertip with water and flatten the tip of the carolines.;
  8. Place to bake in a preheated oven at 200ºC for at least 35 minutes (I left almost 60 minutes in the oven as I wanted them to be very dry and golden);
  9. When to take the Carolinas out of the oven, unmold immediately because if you let them cool on parchment paper they run the risk of sticking and when trying to remove it, the bottom may come off;
  10. Make one creme or any other stuffing you want. Place the filling in a pastry bag and use a very fine nozzle with points to make it easier to pierce the gluten-free cookies.. with its own beak, you pierce it on top and stuff it as far as you can;
  11. Finally, dip the balls upside down in melted chocolate..

very easy right? Now let's get to some details of the recipe.

To make the stuffing, I used a Confectioner Cream normal, just replace the leite and butter for zero lactose options. Some I put lactose-free dulce de leche bought ready-made. The stuffing depends on your choice and taste., so take care there and put one that makes your mouth water.

As for chocolate, I didn't have a version at home that was gluten and lactose so I used only gluten free. I had a 1kg chocolate bar like that to cover and I used 100g to melt and cover the gluten-free carolines. But I already advance that this amount was an exaggeration, could have been around 50 a 60g.

I must confess that I was very happy with my result and very surprised and how delicious this recipe turned out.. Even more so because there is only one type of flour available and it is the cheapest of all. (in the gluten free branch). So the recipe besides being super easy to make is also super affordable.
