The tastiest part of this recipe bread gluten-free and lactose-free corn is where this sweet and sour mixture happens (butter + will). The bread itself is sweet! But it seems that this candy calls for something salty along with it, it goes really well with cheese too.

Method of preparation gluten-free and lactose-free corn bread

  1. Preheat the oven to 330ºC. Grease a bread pan or if you prefer to make it in the form of a cake, utilize uma assadeira quadrada de 22×22.
  2. In a bowl mix the gluten free flour, the corn flour, salt and yeast (and xanthan gum if you chose to use rice flour).
  3. Add butter and honey, the milk and the eggs; stir until you get a homogeneous mixture.
  4. Pour the batter into the prepared pan..
  5. Bake in preheated oven for 20/30 minutes, until a toothpick inserted in the center of the pan comes out clean.. Let it cool for a few minutes and cut into slices. (in the bread pan) or in 9 equal squares (in the cake pan).
  6. Serve with butter and more honey.

This recipe was inspired by a blog of an american who made this amazing recipe. It turned out that on the day I chose to test the recipe, I didn't have the gluten-free flour mix at home and the store is far from home, So I had to make an adaptation and it worked fine.

I love making recipes that work with rice flour because its value is lower than the mix. And this was one of them! in the original recipe, the shape used was square but I didn't have that utensil at home either. I had to do it in a bread pan, because all the other rectangles were too big.

The result was that the recipe was in the same bread format, but that didn't change the fluffy texture and delicious taste.

The mixture of honey and butter was absolutely amazing, the recipe did not last two full days at home!
