How to prepare gluten-free and lactose-free fitness coxinha in the air fryer in video

Method of preparation described

  1. Put the sweet potato to cook with a little water. Take it off the heat only when it's very soft..
  2. Make a puree with this potato by mashing it with any utensil of your choice. (juicer, fork, liquidificador…), the important thing is to be well kneaded, without potato pieces as this can make it difficult to model the drumsticks.
  3. Place the mashed potatoes in a bowl and mix in the rice flour, the cooking water and salt and seasonings that you think is cool to put (I used only salt in the dough).
  4. Mix with a spoon or with your hands until the dough is homogeneous and ready to shape., without sticking to the hands.
  5. take some of the dough, open in hands, put the stuffing and close by pulling the sides up.
  6. Finally, coat the drumsticks in golden flaxseed flour and place in the air fryer or oven for 10 a 15 minutes at 200ºC. The point I usually remove the drumsticks is when I press them and they are already hard (crispy).

Stuffing is your choice., but I will leave some suggestions here.

Mine I chose to make chicken, I used shredded chicken seasoned with tomato and onion chopped very small, will, paprika, parsley and chive. I like to use tomato because it makes the stuffing more succulent in my case I can't put a catupiry together because of the milk restriction.

If you also have this restriction on milk, a suggestion I give is to make the recipe for Homemade Cheddar Cream and put it in place in the catupiry.

For vegans or vegetarians, you can make the stuffing with jackfruit meat that I have already made in the version of drumstick with parsley manioc dough and it's delicious.

Details to make the recipe work

I've never tried to make it with any other flour besides rice flour., so I recommend keeping the recipe that way..

A follower made it in the oven and loved the result, but I haven't tested it myself. From the photo she posted, it was just like mine so if you want to do it, for sure!

get fried, obviously it will be delicious, but it loses the focus of being a fitness and healthy recipe but that's up to each one's choice.

If you want, you can change the sweet potato for normal potato or parsley manioc because they all have similar weight and textures.
