The gluten-free and lactose-free cornmeal cake recipe with guava is the typical grandma's recipe that everyone LOVES!

It's a cute cake, stuffed, very tasty, easy and cheap to make even for celiac/allergic/intolerant people, because it won't mix gluten-free flours. The guava syrup is optional but I strongly recommend that you make it too.. And the coolest thing about this cake is that it seems that the more the days go by, the hotter he gets. Quite different from the gluten-free cakes we usually see, it's not? So I guarantee that if you make this recipe, you will not regret.

Ingredients

  • 3 eggs
  • 1 cup of vegetable oil
  • 1 cup of vegetable drink (I used the homemade rice milk but you can use any plant milk or regular milk if you have no restriction)
  • 2 cups of sugar or 1 3/4 Cup
  • 1 cup of rice flour
  • 2 cups of cornmeal flour
  • 1/2 xanthan gum teaspoon
  • 1 tablespoon of chemical yeast
  • Around 150g of chopped guava for the dough (but it can be more or less, Depends on everyone's taste)
  • 1 1/2 cup of chopped guava for the syrup
  • 1 cup water

Method of preparation described

  1. Start by adding the liquid ingredients: eggs, vegetable oil and milk. Beat everything in the mixer just until mixed.
  2. Now for each dry ingredients you add, beat them in a mixer to avoid lumps.. add the sugar, the cornmeal flour, rice flour and xanthan gum.
  3. Finally, add the yeast and beat just a little on the lowest speed to mix it into the dough..
  4. Pour the dough into a greased 33x24cm.
  5. With the chopped guava pieces (150g), “empane” each little piece in the rice flour and spread over the cake dough.
  6. Bake in a preheated oven at 230°C for 30 a 40 minutes.
  7. for the syrup, put in a frying pan 1 1/2 cup of chopped guava with 1 cup water. Stir well. Leave on medium heat until the guava is completely melted.. If the syrup gets too thick, add more 1/2 cup water, stir until well mixed and turn off the heat so it doesn't thicken again..
  8. Spread the syrup over the cake and it's ready.!

Tips for making the gluten-free and lactose-free cornmeal cake with guava paste work

  • Don't worry about sinking the guava pieces into the cake as they will naturally descend..
  • E sim, all the pieces of guava paste are melted and very soft so it's no problem if you want to use a harder guava paste like a smudge
  • If you want you can use gluten-free flour mix in place of rice flour, but honestly I don't see the need. The cake was a little crumbly but nothing that I found out of the ordinary enough to change the flour, but there goes each one.
  • You don't necessarily need to beat this recipe in the mixer., because it's a relatively easy dough to stir., I did it just to make it easier.
