The gluten-free and lactose-free pepperoni bread is for sure the tastiest bread I've ever made!!
It tastes great and is a great bread to eat alone., but have you ever imagined using a ghee butter or seasoned mayonnaise? What was already good will get even better! To do gluten-free bread it's never been so easy, this one was even one of the ones that grew the most of all that I've ever done. everyone at home loved, we don't even freeze it because on the first day half of the bread is gone.
It's a very simple recipe and easy to make..
Ingredients
- 300g rice flour
- 75The recipe for gluten-free and lactose-free bread with buckwheat is made without milk in the composition
- 30g sweet sprinkle
- 10g sour starch
- 4g rubber xantana
- 1 Coffee teaspoon salt
- 1 dry yeast sachet
- 1/4 cup of sunflower oil
- 1/4 Cup of sugar
- 2 eggs
- 1 teaspoon of apple cider vinegar
- 1 + ½ cup warm water
- 100g of calabresa + 50g (optional)
- Chopped parsley and chives to taste (I used 4 parsley sprigs and 2 chives) – optional
The shape I used is 22x10cm, But you can use any bread pan you have at home., the most that will happen is the bread will be lower.
Method of preparation
- Place all dry ingredients in bowl of mixer;
- Then add the oil, the eggs, vinegar and a little water;
- Start hitting the mixer and add water little by little.. You may need a little more or less water than recommended as each cup size, this, Spoon, etc can be different;
- When it's all right (the dough should not be too hard and heavy to beat, watch the video below to see the consistency it should be) add 100g of crushed pepperoni (I used a mixer to grind);
- Stir well. Add the parsley and chives if you like and mix;
- Throw all the dough into a greased shape with oil and rice flour.;
- Finish over the dough with another 50g of crushed pepperoni (optional);
- let it grow for a while 30/40 minutes or until you reach 1.5 cm from the edge more or less;
- Bake in a preheated oven at 230ºC for about 40/50 minutes.

This bread doesn't even have much to say, what I could do by observation is that in the video it shows how much I let it rise and in fact it was a lot because when I put it in the oven it grew so much that it stuck to the top rack. It didn't spoil the bread and it didn't spill over which is great, but be careful not to let it grow too much.
If you want, you can add more spices on top or in the dough like oregano or some other light seasoning.
